    all purpose flour
  • 1 1/2 c
    sweetened coconut
  • 1 c
    buttermilk
  • 1 tsp
    baking soda
  • 5 lg
    egg whites, room temperature
  • 1/4 tsp
    salt
  • 2 c
    sugar
  • 1 c
    butter, room temperature
  • 5 lg
    egg yolks
  • FROSTING
  • 3 1/2 c
    powered sugar
  • 8 oz
    cream cheese, room temperature
  • 1/2 c
    unsalted butter, room temperature
  • 2 tsp
    vanilla extract
  • 1-2 c
    sweetened coconut

    Preheat oven to 350 degrees F.

    Spray 2 9-inch pans with nonstick spray. Line pans with parchment paper.

    To make the cake, mix flour and coconut in a bowl.

    In a separate bowl, whisk buttermilk and baking soda together.

    In another separate bowl, beat egg whites and salt till peaks form.

    With mixer, beat sugar and butter 2 minutes.

    Add egg yolks and blend. Add flour mixture alternately with buttermilk in 3 additions, blending after each addition. Fold egg whites gently into batter in 2 additions.

    Divide batter into pans and tap on counter to even the batter out. Bake 35 minutes or till tests done. Cool 10 minutes. Run knife around edges; pull off parchment paper gently.

    To make the frosting, beat powdered sugar, cream cheese, butter and vanilla in a large bowl till well blended.

    Spread lower layer on top and sides with plenty of frosting. Put on top layer and repeat. Coat top and sides of cake with coconut using your hands.

    Cover and store in fridge. Remove from fridge 1 hour before serving. Incredible!
