Ingredients For down-east apple cake

    medium tart apples
  • 3 Tbsp
    granulated sugar
  • 1/4 c
    butter or solid margarine
  • 1 1/2 c
    sifted flour
  • 3 tsp
    baking powder
  • 3/4 c
    granulated sugar
  • 1
    egg..well beaten
  • 3/4 c
    milk
  • 1 oz
    one -ounce square semi sweet chocolate
  • 1 tsp
    vanilla extract

How To Make down-east apple cake

    Grease 10x6x2 baking pan..peel.core and quarter apples slice the quarters and arrange in bottom of pan. sprinkle with the 3 Tbsp of sugar.

    In bowl add butter beat til creamy.add sugar and bat til fluffy..sift together flour and baking powder..add egg to sugar mixture beat til light and fluffy..add dry ingredients alternately with milk.folding lightly after each addition, pour over apples..grate chocolate and sprinkle over batter.

    Bake in preheated 350F oven for 45 to 50 minutes.check with toothpick to see if dry if so clean cool in pan for 10 minutes and turn upside down onto wire rack to cool....serve with sauce.

    Lemon Sauce 1 cup sugar..4 tbsp cornstarch..2 tbsp butter..3 tb lemon juice..2 cups cold water..im small pot mix together water and cornstarch stir to completely blended add remaining ingredients except butter and cook stirring constantly til thickened cook about 15 mins remove from stove and stir in the butter..cut cake into squares and por syrup over cake

    The cake recipe is also great with canned peach slices or pineapple slices and served with same sauce.. before baking the cake sprinkle top of cake with mix of 2 tsps cinnamon and 1/4 cup of sugar.
