Ingredients For double apple cake

    granny smith apples cut in 1/2 inch wedges. c
  • 2
    macintosh apples cut in 1/2 inch wedges
  • 2
    fresh lemon juice
  • 3 c
    flour
  • 1 1/2 tsp
    baking soda
  • 1 1/2 tsp
    cinnamon
  • 1/8 tsp
    nutmeg
  • 2 Tbsp
    lemon zest
  • 2 c
    white sugar
  • 1 c
    canola or vegetable oil
  • 1/2 c
    orange juice
  • 1 1/2 tsp
    vanilla
  • confectioners sugar for dusting top

How To Make double apple cake

    Peel and cut apples into wedges place in bowl and add tablespoon of lemon juice and coat well to avoid apples turning brown..heat oven to 359F..coat a 9 by 13 inch baking.pan with cooking spray..line with parchment leaving an overhang on both ends.

    In a bowl mix together flour, baking soda cinnamon and nutmeg...In another bowl beat together eggs, sugar, oil, orange juice and vanilla combine the wet and dry, mix well to incorporate..add half of the apples and spread into pan,,arrange the remaining apples on top and sprinkle with cinnamon and sugar mix of 3 TBS sugar and 2 tsps cinnamon.

    I forgot to add in the zest and this you can add in with the egg mixture...bake 55 to 60 minutes or test with toothpick in the center if clean it is ready to come out of oven.. let cool 15 minutes in pan remove to wire rack to completely cool..sprinkle with confectioners sugar when cooled..cut into bars or squares...Enjoy with a dollop of ice cream..
