I've made these a few times. The plump cranberries are scrumptous. My family loves them even tho they have splenda in them. They are quite a tasty treat! I took a picture but can't get my camera to share here for some reason today.

Ingredients For diabetic oatmeal/cranberry muffins

1 cquick oats, not instant

1 cskim milk
-
1 cwhole wheat flour

3 tspbaking powder
-
1/3 csplenda sweetner
-
2egg whites, or 1/4 cup egg substitute

1/4 cvegetable oil
-
1/2 capplesauce
-
1 Tbspcinnamon
-
3/4 cplumped craisins
-
2 Tbspflaxseeds (opt)
How To Make diabetic oatmeal/cranberry muffins

1in a bowl, pour milk over oats, let set 15 minutes

2in meantime, pour boiling water over craisins just to cover

3In large bowl, mix dry ingredients together

4add oat mixture, eggs applesauce and oil, stir, do not use mixer

5when well blended, add (drained) plumped craisins, stir them in

6pour batter evenly into 12 muffin tins. don't be afraid to fill to the top. I used cupcake liners that were sprayed with cooking spray.

7Bake in a 425 degree preheated oven 25 - 30 minutes
