This is a holiday favorite that I make every time it is requested. I usually will add a little homemade salted caramel sauce to drizzle on it just before serving

Ingredients For decadent pecan cheesecake

18 oz package of cream cheese, softened

1/2 csugar

1egg, beaten
-
1/2 tspsalt

1 tspvanilla extract

2packages graham crackers
-
1 1/4 cpecans, chopped

1/2stick of butter melted
- TOPPING

3eggs
-
1 clight corn syrup
-
1/4 csugar
-
1 tspvanilla
How To Make decadent pecan cheesecake

1Preheat oven to 375.

2In a food processor blend graham crackers until fine, then pour into a bowl and add melted butter and mix well, place mixture in springform pan pushing some of the crust up the sides. Bake for 10 minutes, then remove from oven and set aside.

3in another bowl, cream together the cheese, sugar, egg, salt and vanilla. Pour over the graham cracker crust and sprinkle pecans evenly over the top

4combine all of the topping ingredients and beat until smooth, poor over pecans and bake for 34-45 minutes until pecan layer is golden brown. Cool on a wire rack. Serve with some of my bourbon whipped cream topping or a salted caramel drizzle... or use both!
