- FOR THE CAKE

250gpitted dates (chopped)

5 Tbspbutter (room temperature)

1 tspbaking soda

1 cboiling water

1tea bag
-
1egg (beaten)

1 cpacked brown sugar

1/2 cseedles grapes
-
1/2 cinstant oats
-
1/2 cunprocessed wheat bran (hodgson mill)

1/2 cpecans (chopped)

1green apple (grated)
-
1 1/2 cself raising flour

1 tspbaking powder
-
1/2 tspsalt
- FOR THE FROSTING
-
3 1/2 ozcream cheese (room temperature)

3 Tbspbutter
-
1 tspvanilla extract
-
1 cbakers sugar
-
1 cpowder sugar
-
rind of 1 orange
How To Make date & pecan cake with a citrus rind cream cheese frosting

1Preheat Oven to 350 degrees F Greese a 10" Spring Form Pan. Set aside.

2Pour water over teabag. Let stand for a while. In a mixing bowl, combine butter and dates. Pour tea over and let cool. In a Large mixing bowl, beat egg and sugar until fluffy. Add raisins,oatmeal,bran,pecans,apple and cooled dates. Sift in Flour, baking powder and salt and mix well. pour into buttered pan and bake for 45 min. Cool on wire rack.

3Beat cream cheese and butter and add orange rind and vanilla. Add bakers sugar slowly until well mixed. Add powder sugar and spread over cooled cake. Top with Whole pecans
