1/4 cwarm water (105 degrees f to 115 degrees f)

greased 9 x 9-inch baking pan
How To Make crumb cake

1Preheat oven to 350 degrees F.

2Dissolve the yeast in the warm water.

3Set aside.

4In a saucepan, combine the milk and butter, cut into pieces.

5Heat this until just lukewarm.

6In a mixing bowl, combine the yeast, milk mixture, 1 egg, 1 egg white, salt, sugar and 1/2 cup flour.

7Beat for 2 minutes.

8Add remaining flour.

9Beat into a stiff batter for 2 minutes at high speed, if using a mixer.

10Spread into a greased 9 X 9-inch baking pan.

11Make the topping by creaming together the butter and sugar.

12Blend in the egg yolk, flour and cinnamon. The mixture will be crumbly.

13Sprinkle topping over the dough.

14Cover the baking pan.

15Let rise in a warm place until almost doubled, about 1 hour.

16Bake at 350 degrees F for 35 to 40 minutes.
