Prep time: 15 to 20 min. Rising time: 1 hour Baking time: 35 to 40 min. Tips: If the eggs are at room temperature, they will not cool the batter and slow the rising. The milk can be heated to a warmer temperature if the eggs are chilled. The most important step is to add the dissolved yeast to a lukewarm mixture.

Ingredients For crumb cake

  • 1 pkg
    active dry yeast
  • 1/4 c
    warm water (105 degrees f to 115 degrees f)
  • 1/2 c
    milk
  • 1/2 c
    butter or margarine
  • 1
    egg
  • 1
    egg white
  • 1/2 tsp
    salt
  • 1/2 c
    granulated sugar
  • 1 1/2 c
    all purpose flour
  • CRUMB TOPPING
  • 5 Tbsp
    butter or margarine
  • 1/2 c
    granulated sugar
  • 1
    egg yolk
  • 1 c
    all purpose flour
  • 2 tsp
    cinnamon
  • EQUIPMENT
  • greased 9 x 9-inch baking pan

How To Make crumb cake

    Preheat oven to 350 degrees F.

    Dissolve the yeast in the warm water.

    Set aside.

    In a saucepan, combine the milk and butter, cut into pieces.

    Heat this until just lukewarm.

    In a mixing bowl, combine the yeast, milk mixture, 1 egg, 1 egg white, salt, sugar and 1/2 cup flour.

    Beat for 2 minutes.

    Add remaining flour.

    Beat into a stiff batter for 2 minutes at high speed, if using a mixer.

    Spread into a greased 9 X 9-inch baking pan.

    Make the topping by creaming together the butter and sugar.

    Blend in the egg yolk, flour and cinnamon. The mixture will be crumbly.

    Sprinkle topping over the dough.

    Let rise in a warm place until almost doubled, about 1 hour.
