crazy cake
This was my Dad's recipe, and I have no idea where he got it, but I've been making it since I was a kid. It's crazy because you mix the ingredients right in the baking dish! It's super simple and quick, and you can't beat the deep chocolate flavor. Topped with a chocolate butter cream frosting -- you're in chocolate heaven! Did I mention chocolate?! ;)

Ingredients For crazy cake

1 csugar

1 1/2 cflour*

1/2 tspsalt

1/4 ccocoa powder

1 tspbaking soda

1 Tbspvinegar

1 tspvanilla

1/3 cvegetable or coconut oil

1 ccold water
How To Make crazy cake

1Sift sugar, flour, salt, cocoa, and soda into a 9" square baking dish.

2Then add vinegar, salad oil, vanilla, and cold water.

3Stir together with a fork until nearly lump free -- make sure to get the corners.

4Bake at 350* for 30-35 minutes, til a toothpick comes out clean. Cool to room temp, and frost.

5NOTES: This makes a nice, deep cake. I have also used round baking pans, divided the batter between them, and made layer cake (plan much shorter baking time) Or you could use a spring form pan, for special occasion decorating :)

6*This recipe is easily made gluten free, by using your favorite gluten-free all purpose baking flour. (I like Bob's Red Mill brand.)
