Ingredients For cranberry poppy seed loaf

  • 2 1/2 c
    flour
  • 3/4 c
    granulated sugar
  • 2 Tbsp
    poppy seed
  • 1 Tbsp
    baking powder
  • 1 c
    fat free (skim) milk
  • 1/2 c
    fleischman's margarine, melted
  • 1/4 c
    egg beaters
  • 1 tsp
    vanilla extract
  • 2 tsp
    grated lemon peel
  • 1 tsp
    lemon juice
  • 1 c
    fresh or frozen cranberries, chopped ,uncooked
  • GLAZE:
  • 1 c
    powdered sugar
  • 5-6 tsp
    lemon juice
  • 1/2 tsp
    corn syrup, light
  • 1/2 tsp
    butter or margarine

How To Make cranberry poppy seed loaf

    In a large bowl, combine flour, sugar, poppy seed, and baking powder; set aside. In a small bowl, combine milk, margarine, egg, vanilla and lemon peel. Stir milk mixture into flour mixture just until moistened. Stir in cranberries. Spread batter into greased 8x4-inch loaf pan. Bake at 350^ for 60 to 70 minutes or until tested done. Cool in pan on wire rack. Combine glaze ingredients in a small bowl and mix until smooth.
