The aroma of this quick and easy cake will make your mouth water. I think it is the almond extract in it that really makes it a winner. And hot out of the oven it is delicious.

1 call purpose flour

1/2 csugar plus 1/3 cup sugar, divided

2 tspbaking powder

1/2 tspsalt

1egg, lightly beaten
-
1/2 c2% milk

1 Tbsporange juice
-
1 Tbspvegetable oil
-
1/4 tspalmond extract
-
2 ccranberries, fresh or frozen
- TOPPING

1/4 call-purpose flour
-
3 Tbspsugar
-
2 Tbspcold butter
How To Make cranberry crumb cake

1Preheat oven to 375 degrees and spray an 8" square baking dish with nonstick cooking spray.

2In a large bowl, combine the flour, 1/2 cup sugar, baking powder and salt.

3Combine the egg, milk, orange juice, oil and extract; stir into dry ingredients. Pour into baking dish.

4Combine cranberries and remaining 1/3 cup sugar; spoon over batter.

5For the topping, combine flour and sugar in a small bowl; cut in the butter until crumbly. Sprinkle over cranberries.

6Bake at 375 degrees for 35-45 minutes or until edges begin to pull away from sides of pan. Refrigerate leftovers, if you have any.
