One of the best cooks I ever knew brought these to work more than once and everyone always loves them. I made them for my kids and didn't tell them about the surprise in the middle. It's a pretty tasty surprise!

Ingredients For coleen's cream cheese chocolate cupcakes

  • 8 oz
    cream cheese, softened
  • 1 lg
    egg
  • 1/2 c
    sugar
  • 1/8 tsp
    salt
  • 3 c
    flour
  • 2 c
    sugar
  • 1/2 c
    cocoa powder
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 c
    water
  • 2/3 c
    oil
  • 2 Tbsp
    vinegar
  • 2 tsp
    vanilla extract

How To Make coleen's cream cheese chocolate cupcakes

    Combine cream cheese, egg, 1/2 cup sugar, and 1/8 teaspoon salt. Shape into small balls, about 1 teaspoon of cheese mixture.

    Sift together flour, 2 cups sugar, cocoa powder, baking soda and 1 teaspoon salt. Add remaining 4 liquid ingredients.

    Fill paper cups 1/3 full. Drop cheese ball in middle.

    Bake at 350 degrees F. for 20 minutes. Makes approximately 36 cupcakes.
