My mother used to make these for special occasions, which we all looked forward to, because they'rs so yummy!

Ingredients For coffeecake muffins.

  • 1 c
    flour
  • 1/2 c
    whole whaet flour
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/4 c
    butter
  • 8 oz
    light sour cream
  • 1/2 c
    sugar
  • 1/2 c
    fat-free milk
  • 1 lg
    egg, beaten
  • 1/4 c
    packed light brown sugar
  • 1/4 c
    chopped walnuts
  • 2 Tbsp
    sugar
  • 1 tsp
    cinnamon

How To Make coffeecake muffins.

    Heat oven to 350. Spray 6 muffin cups w/ cooking spray. In bowl, combine flours, baking powder, baking soda, and salt. Cut in butter until crumbly.

    In another bowl, stir together sour cream, 1/2 cup sugar, milk and egg. Add to dry ingredinets until just combined. In small bowl, stir together brown sugar,nuts, 2 tbsp sugar and cinnamon.

    Spoon 1/2 the batter into cups, sprinkle w/ 1/2 the nut mix. Top w/ remaining batter and nut mix. Bake 25 min, or until a toothpick inserted in center comes out clean.
