My mother has something we like to refer to as "THE BOX." The box is a huge box full of 'found' recipes she's haphazardly thrown into it over the years, but has probably only made a fraction due to the inability to find any of the recipes when you need them. I have the equivalent of "THE BOX" on my laptop. =] So I was going through all my files last night and came across this gem. It's really tasty and easy. And if this is what all the recipes I've collected are like... I need to organize.=]

Ingredients For coffee cake in a cup for two

  • CAKE BATTER
  • 2 Tbsp
    butter, softened (not melted)
  • 4 Tbsp
    sugar
  • 1
    egg
  • 4 Tbsp
    sour cream
  • 1/8 tsp
    vanilla (or just a few drops, don't add too much!)
  • 1/2 c
    flour
  • 1/4 tsp
    baking powder
  • CRUMB TOPPING
  • 2 Tbsp
    butter softened
  • 4 Tbsp
    flour
  • 2 Tbsp
    brown sugar
  • 1 tsp
    cinnamon (i added 1 1/2 tsp. but i love cinnamon)

How To Make coffee cake in a cup for two

    In small bowl, cream softened butter and sugar with a spoon or fork(you definitely don't need a mixer for this recipe!). Add egg, sour cream and vanilla and mix until smooth.

    Add flour and baking powder, stir until smooth. Split the batter between two coffee mugs. Set aside.

    In a separate small bowl or ramekin, mix butter, brown sugar, flour, and cinnamon until evenly blended. Split in half and place on top of the batter in each mug.

    Cook one mug at a time in the microwave. I would start out with one minute and continue by 10 to 15 second increments until it's your desired doneness. (I usually do about one minute and twenty seconds)

    Be careful because the mug and the cake will be really hot. Enjoy! =]
