This dessert recipe is a variation of Vanilla Slice, a popular custard-like dessert from Australia. Many various fruit versions are easily found now, and this coconut version is a little more cake-like than custard-based, but it's quite easy to prepare and delicious.

1 cself-rising flour

1 pinchsalt

3/4 cgranulated sugar

1 cdesiccated coconut (or unsweeeted shredded coconut)

1/2 cbutter, melted

1/2 cmilk
-
2 lgeggs, beaten

1 tsppure vanilla extract
- ICING:

1 1/3 cconfectioners' sugar

1 Tbspbutter, softened
-
2 Tbspboiling water
-
1 dashred or pink food coloring

1/2 cdesiccated coconut (or shredded coconut)
How To Make coconut slice dessert

1Preheat oven to 350°F (180°C). Lightly butter a 9-inch square baking dish; set aside.

2In a bowl, mix together the flour, salt, sugar, coconut and melted butter. Stir in beaten eggs, milk and vanilla.

3Spread mixture into prepared baking dish, and bake for 25 to 30 minutes. Let cool slightly before icing.

4Toward the end of the baking time, prepare the icing: In a large mixing bowl, stir together the sugar and butter. Pour in just enough boiling water to make a thick paste. Add enough food coloring to tint the icing a soft pink. (The icing will harden a little if it sits too long, so it's best to frost the dessert while it's still warm as it's easier to spread.)

5Frost the cooled dessert with the icing, and sprinkle coconut on top.
