This is a great coconut cake by Aunt Caroline use to make. She was one of my favorites.

Ingredients For coconut pound cake

  • 3 stick
    margarine
  • 3 c
    sugar
  • 6
    eggs
  • 1 c
    evaporate milk
  • 3 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 1/2 tsp
    lemon extract
  • 1 can
    coconut (1 1/3 cups)

How To Make coconut pound cake

    Preheat oven to 350 degrees 1. Have eggs and margarine at room temperature. 2. Sift flour, baking powder and salt in bowl-set aside. 3. In a large bowl cream margarine, add sugar, eggs one at a time. Mix thoroughly after each egg. Add flour mixture to creamed mixture alternating with one cup milk, blend well. Add coconut and extract. 4. Bake for 1 hour and 20 minutes
