1 (18.25) ozpackage light white cake mix

1 clow-fat buttermilk

1/4 cvegetable oil

1 tspcoconut extract

1/4 cflaked sweetened coconut

1/4 cpacked light brown sugar
- CREAM CHEESE FROSTING:

1 lbcream cheese, at room temperature
-
1/2 lb(2 sticks) unsalted butter, at room temperature
-
3/4 tsppure vanilla extract
-
1/4 tsppure almond extract
-
1 lbconfectioners' sugar, sifted
-
6 ozsweetened shredded coconut
How To Make coconut cake

1Preheat oven to 350°.

2Coat a 13 x 9-inch baking pan with cooking spray; dust with flour.

3Combine cake mix and next 5 ingredients (cake mix through egg); beat at low speed of a mixer for 30 seconds. Beat at medium speed for 2 minutes. Pour half of batter into prepared pan. Sprinkle with flaked coconut and brown sugar; top with remaining batter. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool the cake completely in pan. Spread the Coconut-Cream Cheese Frosting over top of cake.
