This is a very, very rich coconut cake. Even those who aren't crazy about coconut cake usually like this one.

Ingredients For coconut cake with a kick

  • 1 box
    duncan hines yellow cake mix
  • 1 can
    coco lopez cream of coconut
  • 1 can
    eagle bran milk
  • 1
    lg. cool whip whipped topping
  • 1
    reg. cool whip whipped topping
  • 1 1/2 pkg
    fresh or frozen grated coconut
  • milk

How To Make coconut cake with a kick

    Mix the cake mix, substituting milk when it calls for water. Follow baking directions for a 13x9 inch pan. Bake until toothpick inserted in middle comes out clean.

    While still hot,poke holes in cake with fork and pour cream of coconut over cake. Spread evenly. Then spread eagle bran milk over that. Sprinkle a small amount of coconut over this.

    Cover and refrigerate at least one hour, I usually refrigerate over night.

    Using cool whip, cover completely. Cover this using the rest of the coconut.
