- CUPCAKES:

cooking spray

20muffin liners

1 boxyellow cake mix

1 lg boxinstant french vanilla pudding, dry

1 csour cream

3 x lgeggs
-
1/4 cwater

1/2 cvegetable oil

1/2 cdark brown sugar, firmly packed

1 1/2 Tbspcinnamon, ground
- FROSTING & CINNAMON SWIRL:

5 chomemade or canned cream cheese frosting

1/4 cdark brown sugar, firmly packed

2 Tbspcinnamon, ground
How To Make cinnamon roll cupcakes

1CUPCAKES: Preheat oven to 350 degrees F. Coat 2 muffin tins with cooking spray. Line 20 muffin cups with liners.

2On low speed, beat cake mix, pudding, sour cream, eggs, water & oil for 1 minute. On medium high speed, beat 2 minutes.

3Mix 1/2 C batter, 1/2 C brown sugar & 1 1/2 Tbsp cinnamon. Fill cups 1/2 way with 1/2 of the plain batter; top each with 2 tsp brown sugar mixture; top with remaining batter. Bake 20 minutes until inserted pick emerges clean. Cool.

4FROSTING & CINNAMON SWIRL: Pipe 4 C cream cheese frosting in spiral over cupcakes. Mix 1 C cream cheese frosting, 1/4 C brown sugar & remaining cinnamon; blend well. Pipe in spiral over cupcakes to resemble cinnamon rolls.
