This is the third recipe for an oats layer cake I created, with cinnamon inside the cake, it tastes like cinnamon rolls with oats.

  • 3 c
    rolled oats, divided
  • 2 c
    dark brown sugar, divided
  • 1 c
    whole milk, divided
  • 3/4 c
    cinnamon roll flavored liquid creamer
  • 8 tsp
    ground cinnamon, divided
  • 4 Tbsp
    cinnamon-sugar, divided
  • 1 box
    white cake mix
  • 1 c
    water
  • 1/2 c
    vegetable oil
  • 3
    egg whites
  • 2 Tbsp
    margarine
  • 1 c
    heavy cream
  • 3/4 c
    half and half
  • 8 oz
    cream cheese, softened

How To Make cinnamon oats layer cake

    In a medium jar, combine 1 cup rolled oats, 1/2 cup brown sugar, 1/2 cup whole milk, the liquid creamer and 2 teaspoons ground cinnamon. Stir well for 30 seconds until blended. Cover and refrigerate for 4 hours.

    Preheat oven to 350 degrees F.

    Coat two 9-inch round cake pans with cooking spray. Sprinkle with cinnamon/sugar between the cake pans.

    In large bowl, combine cake mix, water, oil, egg whites, 1/2 cup brown sugar and 2 teaspoons ground cinnamon; beat on medium speed for 3 minutes.

    Add cinnamon oat mixture into the cake batter, beat again on low speed for 30 seconds. Pour into the cake pans.

    Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Cool completely for 6 minutes.

    Heat margarine in a large skillet over medium heat. Add remaining rolled oats, 1/2 cup brown sugar and 2 teaspoons ground cinnamon, saute for 3 minutes or until the oats are crispy. Remove from heat and set aside.

    In a medium bowl, combine heavy cream, half and half, remaining milk, cream cheese and remaining brown sugar and ground cinnamon; whisk well for 2 minutes or until smooth and creamy.

    Place one layer of cake on the serving plate. Spread half the frosting evenly over the top and sprinkle with the sauteed oat mixture. Press evenly with a spoon.

    Place a second layer cake on top. Spread remaining frosting on top and sides of the cake. Sprinkle with remaining cinnamon-sugar.
