"churro" mug cake

Sometimes a gluten-free/sugar-free girl just has to treat herself to a quick lil' snack cake... I adapted different mug cake recipes I'd tried to taste the way I liked.

Ingredients For "churro" mug cake

  • 1 Tbsp
    coconut oil (melted)
  • 1 Tbsp
    honey
  • 1/4 tsp
    mexican vanilla
  • 1/8 tsp
    kosher salt (or just a pinch)
  • 1/4 tsp
    ground cinnamon
  • 1
    egg
  • 1/3 c
    almond flour

How To Make "churro" mug cake

  • salt, honey, almond flour, cinnamon, coconut oil, Mexican vanilla & egg

    Stir all ingredients except almond flour into a large mug until well blended.
  • egg & wet ingredients in mug in front of almond flour bag

    Mix in almond flour.
  • batter in mug

    Microwave 2 minutes on "high" (adjust for your particular model)
  • cake in mug

    Turn out onto plate (or eat straight from mug, if you wish)
  • baked mug cake tipped onto plate

    Enjoy with your favorite hot (or iced) beverage!
