This one the grand prize in "Absolutely Apples" Taste of Home contest in 2006. Debi Benson of Bakersfield, California was the winner. Thanks to Debbi for a delicious, easy cake. I make it often.

Ingredients For chunky apple cake

1/2 cbutter, softened

2 csugar
-
1/2 tspvanilla extract

2eggs
-
2 cflour
-
1 1/2 tspcinnamon

1 tspnutmeg
-
1/2 tspsalt
-
1/2 tspbaking soda

6 cchopped peeled tart apples
- BUTTERSCOTCH SAUCE:
-
1/2 cpacked brown sugar
-
1/4 cbutter, cubed
-
1/2 cheavy whipping cream
How To Make chunky apple cake

1In a large mixing bowl, cream the butter, sugar and vanilla. Add eggs, one at a time, beating well after each addition.

2Combine flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff).

3Stir in apples until well combined.

4Spread into a greased 13 X 9 baking dish. Bake at 350 degrees for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving.

5For the butterscotch sauce: In small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake.
