This dessert is so good it seems a shame to have Christmas in the title. This is so good year around. Even though it is cheesecake it does not need to be baked in a cheesecake pan -it can be baked in a pie pan or in a square pan. This is so simple , you will make it often using different fruit each time.

Ingredients For christmas cherry cheesecake bars

  • CRUST:
  • 1/3 c
    cold butter
  • 1/3 c
    brown sugar, firmly packed
  • 1 c
    flour
  • FILLING:
  • 8 oz
    cream cheese, softened
  • 1/4 c
    granulated sugar
  • 1 lg
    egg
  • 1 Tbsp
    lemon juice
  • 1/4 c
    green maraschino cherries
  • 1/4 c
    red maraschino cherries

How To Make christmas cherry cheesecake bars

    Crust: Cut butter in chunks, add brown sugar and flour. Mix at low speed. Mix at medium speed for 1 minute. Reserve 1/2 cup crumbs. Press remaining crust mixture into an 8-inch square baking pan. Bake in center of oven at 350^ for 10-12 minutes. --- Filling: Beat cream cheese, sugar, egg and lemon juice together at medium speed until fluffy about 2 minutes. Stir in chopped fruit. Spread filling over hot crust, sprinkle with reserved crumbs. Continue baking for 18-20 minutes or until filling is set and lightly browned. Cool in refrigerator.
