Gotta eat your Veggies, but I like mine warmed with vanilla ice cream and hot fudge sauce :) oh no. anyway, this is my favorite tried and true recipe I have been making for 30 years.

Ingredients For chocolate zuchinni bread / cake

  • 2 1/2 c
    all purpose flour
  • 1/2 c
    cocoa powder
  • 2 1/2 tsp
    baking powder
  • 1 1/2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 c
    zucchini, coursely shredded
  • 1/2 c
    milk
  • 3/4 c
    butter, softened
  • 2 c
    sugar
  • 3 lg
    eggs
  • 2 tsp
    vanilla extract (always pure)
  • 1 tsp
    cinnamon
  • 2 tsp
    orange peel, ( fresh is best) opt.
  • 1 c
    nuts, raisins. opt.......

How To Make chocolate zuchinni bread / cake

    Heat oven to 350*. Beat together the butter and sugar until smooth and blended. Add eggs one at a time, beating well after each addition. Stir in vanilla, orange peel (opt),and zucchini. Alternately stir dry ingredients and milk into zucchini mixture, including nuts in last addition.

    Pour batter into greased and floured loaf pans (2) or a 10" tube or bundt pan. Bake 350 for 1 hour or until pick comes out clean. Cool in pan for 15 minutes or so; turn out on wire rack to cool

    You can Glaze with, 2 cups powdered sugar, 3 tbsp. milk and 1 teas. Vanilla. Beat until smooth. OR slice a piece and warm in microwave a few seconds or hot out of the oven. Top with a scoop of Vanilla ice cream and chocolate sauce. I know, me bad, but its just too good. enjoy. xoxoxoxo
