This is a coffee cake so it is a little dense. but the fruit makes it a moist yummy treat in the morning with your coffee.

Ingredients For chocolate zucchini coffee cake

  • 1 3/4 c
    german chocolate cake mix
  • 1 c
    shredded unpeeled zucchini(about 1 medium)
  • 1/2 tsp
    ground cinnamon
  • 1/8 tsp
    ground cloves
  • 1/4 c
    soy milk + 1 teaspoon braggs applecider vinegar
  • 2 Tbsp
    vegetable oil
  • 1/4 c
    mashed banana
  • 1/4 c
    chopped nuts
  • 1/4 c
    dark chocolate chips

How To Make chocolate zucchini coffee cake

    Preheat oven to 350 F. for glass or shiny metal pan Preheat oven to 325 F. for dark or nonstick pan. Oil the sides and bottom of your pan with coconut oil and dust with a tablespoon of cake mix to prevent sticking (you will be serving from your baking pan so use a pretty oven safe dish you feel good serving in.) 8-9 inch round cake pan.

    In a large bowl, beat cake mix, Zucchini, cinnamon, cloves, sour soy milk, oil and banana with an electric mixer on low speed until moistened. Beat on medium speed 2 minutes, scraping bowl occasionally.

    Pour into pan. Sprinkle evenly with nuts and chips.

    Bake 30 -35 minutes or until toothpick inserted in center comes out clean. cool completely, about 1 hour.
