I'm originally from Jersey, the garden state. Every year we had so much Zucchini that you barely knew what to do with it LOL. So Zucchini recipes always catch my eye. This one says that each muffin is 176 calories. Hope you enjoy.

Ingredients For chocolate-zucchini cakes with walnuts

1/2 c(1 stick) of butter ( they recommend unsalted) melted and cooled.

1 csugar

1 lgegg

1 call-purpose flour

1 cfinely grated zucchini (from 1 medium zucchini)

1/4 cunsweetened cocoa powder
-
1/2 c(3 ounces) bittersweet chocolate, chopped, or chocolate chips

3 Tbspsour cream
-
1/2 tspcoarse salt
-
1/2 tsppure vanilla extract
-
24walnut halves
-
non stick cooking spray
How To Make chocolate-zucchini cakes with walnuts

1Preheat oven to 350 degrees. In a large bowl, stir together butter, sugar, salt, and egg until combined. Add vanilla, zucchini, and sour cream and stir until incorporated. Sift flour and cocoa powder into bowl. Combine wet and dry ingredients and stir until combined. Stir in chocolate.

2Spray two mini muffin pans with cooking spray. Fill each cup with 2 tablespoons batter and top with a walnut. Bake until a toothpick inserted in center of a muffin comes out clean, 15 to 17 minutes. Let muffins cool slightly in pans on wire racks before serving.

3Serve it hot paired with a mini scoop of ice-cream/whipped cream should make a really tasty dessert... but will add more calories :)
