Chocolaty, Slight Hint of Spice, Very Moist, Very Addictive, No Icing Required. I love this cake, it's slightly different with the addition of cinnamon and cloves. Ingredients For chocolate zucchini cake

  • 1/2 c
    soft margarine
  • 1/2 c
    vegetable oil
  • 1 3/4 c
    sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 1/2 c
    buttermilk or *sour milk
  • 2 1/2 c
    flour
  • 4 Tbsp
    cocoa
  • 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    ground cloves
  • 2 c
    zucchini, finely grated
  • 1/2 to 1 c
    chocolate chips, (i use 1 cup)
  • *to make sour milk or buttermilk: in glass measuring cup, place 1 1/2 tsp. lemon juice or vinegar, add enough milk to meausre 1/2 cup, let stand 5 minutes.

How To Make chocolate zucchini cake

  • 1
    Cream margarine, oil and sugar. Add eggs, vanilla and sour milk; beat mixture until throughly combined. Mix in flour, cocoa, baking powder, baking soda, cinnamon and cloves. Stir in zucchini. Pour into greased 9x13 baking dish. Sprinkle top of cake with chocolate chips. Bake at 325 degrees F. for 45 minutes until toothpick inserted in center comes out clean.
