I took these to a birthday party and they were a big hit. The cream cheese icing on the top makes them special. If you love the icing you might want to double the ingredients.

13 oz packsage instant choclate pudding

1 csemi-sweet chocolate chips

4large eggs

1/2 cupwater

1/2 cupvegetable or canola oil

1 csour cream

2 tsppure vanilla extract

18 oz package cream cheese,softened

1/2 cbutter,softened

116 oz package confectioners sugar

1 tsppure vanilla extract

1 cmini chocolate chips (for garnish)
How To Make chocolate velvet cupcakes w cream cheese icing

1Preheat oven to 350. Line 24-30 regular size muffin tins with paper liners.

2In a large bowl combine cake mix.pudding mix and chocolate chips. In another bowl beat the eggs and then combine with the water,oil,sour cream and vanilla extract.Stir into the dry mixture until just combined.

3Scoop the mixture into prepared muffin tins and bake at 350 for about 25-39 minutes. Mixture may still appear a little wet . Do not over bake.

4For the icing combine the softened cream cheese and butter with the powdered sugar and vanilla in an electric mixer. Spread or pipe the icing cupcakes after they have cooler. Sprinkle tops with min chocolate chips.
