A friend asked me to make her daughter a chocolate cake for her baby shower. The cake decorations were to her specifications. My Buddy's White Velvet Cake was so good that I decided to tweak it to make the baby cake. It turned out fabulous and made a very moist and fine textured chocolate cake and rose beautifully to the occasion. This was easy to make and tasted absolutely chocolatey and delicious. There were over 50 people at the shower and many of them came up to me and asked me for the recipe. This cake would be great for any occasion paired with your favorite frosting.

Ingredients For chocolate velvet cake

1 boxpillsbury chocolate cake mix

1-1/4 cgranulated sugar

1 c+ 2 tbs. cake flour (not all purpose flour)

1/8 tspsalt

1-1/3 cwater
-
3eggs
-
1/2 cmelted butter (lightly salted)

1 csour cream
-
1 tspeach, vanilla extract and almond extract

2 ozunsweetened chocolate
How To Make chocolate velvet cake

1In a large mixing bowl, add water, extract, eggs, melted butter and sour cream. Mix well with paddle attachment of mixer, or (mix with hand held mixer)

2Melt chocolate in microwave for 30 seconds. Stir and continue melting in microwave at 15 second intervals until chocolate is almost melted. Remove from microwave and stir until chocolate is smooth. Set aside to cool slightly.

3Add cake mix, sugar, cake flour, and salt. Mix with paddle attachment at medium speed for approximately 1 minute.

4Add melted chocolate and continue to mix another 2 minutes, or until most lumps are worked out. It is not necessary to work out all the lumps.

5Pour into prepared pans and bake at 325 degrees until a toothpick inserted into the center comes out clean, or with just a crumb or two clinging to it. Approximately 30 to 35 minutes.

6Note: Makes 7 1/2 cups batter, enough for two full 8" rounds or one 9x13" sheet. Valerie was very happy and surprised with the results of her John Deere theme cake.
