chocolate covered strawberry cupcakes

Wanted to come up with something new for Valentines Day to take to a work bake sale. These turned out so yummy my husband wants me to leave them home. I had a split piping bag so I did both Strawberry & chocolate frosting for 1/2 the batch & just strawberry drizzled with chocolate for the other 1/2. Topped all of them with chocolate covered strawberries. YUM!

Ingredients For chocolate covered strawberry cupcakes
- STRAWBERRY CAKE

1 pkgstrawberry cake mix

1 pkgvanilla or strawberry (when you can find it) instant pudding mix

replace water on mix package with strawberry milk (or reg milk)

eggs as listed on mix

oil as listed on mix

1/2 cfresh strawberries - finely chopped
- CHOCOLATE FILLING

1 pkgchocolate instant pudding mix

1 1/2 cmilk
-
1 pkgcream cheese (8 oz) room temp

1cool whip
- STRAWBERRY BUTTERCREAM FROSTING

1 cunsalted butter, room temperature

4 cpowdered sugar
-
1 tspvanilla
-
1/4 tspsalt
-
1 cstrawberry jam
-
3-6drops of red food coloring as needed to make it pink.

3-4 Tbspheavy cream, cold
- CHOCOLATE BUTTERCREAM FROSTING

1 cunsalted butter, softened
-
3 1/2-4 cpowdered sugar

1/2-3/4 ccocoa powder ( more if you like it darker chocolate)

1/2 tspsalt
-
2 tspvanilla extract
-
3-4 Tbspheavy cream, cold
How To Make chocolate covered strawberry cupcakes

1Cupcakes In large batter bowl combine cake mix, flour and pudding mix. Add rest of ingredients and beat well. Pour into lined cupcake pans and bake for 20-25 minutes. Mine took 21. Cool completely.

2Filling - You can make this any flavor just change the flavor of pudding. Mix pudding mix with milk, beat until slightly thickened. Make sure the cream cheese is room temp & VERY soft. Beat into pudding until we'll combined. Fold in whipped topping. Put in fridge until you 're ready for it. I sometimes make it the night before. Put in pipping bag with filling tip or round tip will do also. Push tip into cupcake and squeeze filling into cupcake until top starts to rise slightly.

3Strawberry Buttercream Make sure the butter is room temp. The softer it is the easier it is to get creamy. Put in bowl of mixer with the paddle. Beat butter for a couple minutes, add powdered sugar and beat on low unless you like a cloud of sugar around you.(been there done that) mix on low until the butter absorbs the sugar & looks crumbled. Add vanilla, jam, food coloring and cream beat until creamy adding cream a little at a time until spreading consistency.

4Chocolate Buttercream Make sure the butter is room temp. The softer it is the easier it is to get creamy. Put in bowl of mixer with the paddle. Beat butter for a couple minutes, add powdered sugar and cocoa powder and beat on low until butter absorbs sugar & cocoa and it looks crumbled. Add vanilla, salt and cream as needed to get to spreading consistency.
