I seriously overhauled a recipe as I am always trying to bake things in a healthier way. This came out better than I thought!

Ingredients For chocolate cinnamon zucchini cake

1/4 cbutter or margarine softened

3/4 cunsweetened applesauce

1/2brown sugar unpacked

2 Tbspsugar

2eggs
-
1 tspvanilla
-
1/2 tspbaking powder
-
1 tspbaking soda
-
1 1/2 tspcinnamon
-
4 Tbspunsweetened cocoa powder

1/2 cmilk- i've used 1% and skim
-
1/2 tspvinegar or lemon juice

2 1/2 cflour
-
2 cgrated zucchini
-
1/2 csemi sweet chocolate chips
How To Make chocolate cinnamon zucchini cake

1Heat oven to 325. Add the 1/2 tsp vinegar or lemon juice to the skim milk and set aside. You want the milk to curdle.

2Blend the first 6 ingredients together. Mix in the dry ingredients, then the milk. Batter will be somewhat thick.

3Fold in zucchini. Spray a 13x9 pan with cooking spray, pour and spread batter.

4Sprinkle chocolate chips over top of cake. Bake for 40-50 mins. or until done.
