These muffins are fabulous, I always double the recipe, Great for a morning snack or anytime!!! If you have a large amount of zucchini in you garden you can make several batches and freeze them.

Ingredients For chocolate chip zucchini muffins

1 1/2 call purpose flour

3/4 csugar

1 tspbaking soda

1 tspground cinnamon

1/2 tspsalt

1 mdegg

1/2 ccanola oil

1/4 cmilk

1 Tbsplemon juice

2 tspvanilla

1 cshredded zucchini
-
1 cchocolate chips
-
1/2 cchopped walnuts (optional)
How To Make chocolate chip zucchini muffins

1In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done.
