These muffins are fabulous, I always double the recipe, Great for a morning snack or anytime!!! If you have a large amount of zucchini in you garden you can make several batches and freeze them.

Ingredients For chocolate chip zucchini muffins

  • 1 1/2 c
    all purpose flour
  • 3/4 c
    sugar
  • 1 tsp
    baking soda
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    salt
  • 1 md
    egg
  • 1/2 c
    canola oil
  • 1/4 c
    milk
  • 1 Tbsp
    lemon juice
  • 2 tsp
    vanilla
  • 1 c
    shredded zucchini
  • 1 c
    chocolate chips
  • 1/2 c
    chopped walnuts (optional)

How To Make chocolate chip zucchini muffins

    In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done.
