I got this recipe from a "Prevention" low fat recipe booklet. It sounds easy enough and makes one 8 X 8 cake, just enough to go around one time :)

Ingredients For chocolate apple-pie cake

  • CAKE
  • 1 c
    flour
  • 2 Tbsp
    cocoa powder
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/4 c
    walnuts
  • 1/3 c
    skim milk
  • 1 Tbsp
    white vinegar
  • 2/3 c
    unsweetened applesauce
  • 1/2 c
    honey
  • 3
    egg whites
  • 3 Tbsp
    + 1 teaspoon cooking oil
  • 1 tsp
    vanilla
  • APPLE TOPPING
  • 2 c
    peeled, diced apples
  • 1/2 c
    orange juice
  • 3 Tbsp
    water
  • 1 Tbsp
    cornstarch
  • 3 lg
    graham crackers, crushed
  • 1 tsp
    cinnamon

How To Make chocolate apple-pie cake

    FOR CAKE:

    In a small bowl mix dry ingredients

    In a cup, combine milk and vinegar
  • 4
    In a large bowl beat together applesauce, honey, egg whites ,oil, vanilla and milk mixture with electric mixer on low.

    stir in flour mixture and mix well

    coat an 8X8 baking pan with cooking spray, add the batter and bake in a preheated 350 degree oven for 35 to 40 minutes

    Let cool 5 minutes before adding the topping

    TOPPING: while the cake is baking, combine the apples and orange juice in a 2 quart saucepan.

    Cover and cook over medium heat for 3 to 4 minutes, or until apples are tender

    in a cup mix the water and cornstarch. pour into the hot apple mixture and cook about 1 minute, until thickened. set aside and cool until needed

    when cake is ready, spread the topping over it. sprinkle with the crumbs and cinnamon

    Broil about 2" from the heat for about 1 to 2 minutes. watch carefully so topping doesn't burn.
