This cake is so delicious, it reminds me of a cordial chocolate cherry. I made this because I had a lot of leftover cranberry jelly from Thanksgiving. I had no idea what to do with it, so I decided to put it in some cupcakes. But I had no liners, so I used my Bundt cake pans. This is perfect for the holidays; my kids devoured it in two days. And, it is so easy to make and not time-consuming. It is even better the next day. You can warm it up and put a scoop of ice cream on top. If you do use canned jelly, you can add some dried cranberries to the batter. You can also add nuts.

  • CAKE
  • 1 c
    milk
  • 2 lg
    eggs
  • 2 Tbsp
    pure vanilla extract
  • 1/4 c
    vegetable oil
  • 1 3/4 c
    granulated sugar
  • 2 c
    all-purpose flour
  • 1 c
    cocoa powder
  • 1 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 c
    jellied cranberry sauce

    Granny Smith apples, peeled and grated
  • CHOCOLATE GLAZE
  • 6 oz
    semi-sweet chocolate chips
  • 1/2 c
    heavy whipping cream
  • 2 Tbsp
    light corn syrup

How To Make chocolate cranberry apple cake

  • Prepare Bundt pan while oven preheats.

    Preheat oven to 350 degrees F and spray the cake pan.
  • Combine milk, eggs, vanilla, oil, and sugar.

    In a large bowl, combine milk, eggs, vanilla, oil, and sugar with a spoon or a mixer until well combined.
  • Sift in flour, cocoa powder, baking soda, baking powder, and salt. Add it to the wet mixture.

  • Add grated apples and cranberry jelly.

  • Microwave cream, chocolate chips, and corn syrup for 1 minute.

    After 1 hour, in a microwave-safe bowl, add cream, chocolate chips, and corn syrup. Microwave on high for 1 minute. Stir until silky smooth.
  • Drizzle glaze over cooled cake.
