Mom got this recipe from my Aunt Waneta Lynch Harris around 1963. My brother, Bob, always wanted this cake as his birthday cake. Mom always served it without frosting, but my niece, Emilea, who is a pastry chef, recently added a cream cheese frosting. So I'm including a Cream Cheese Topping that can be added, if you wish. =^..^=

3 cpeeled apples, sliced thin

2 cwhite sugar

1 ccrisco oil

1/2 tspbaking soda

3 tspbaking powder

3 call-purpose flour

1 tspvanilla

2eggs
-
1 cwalnut pieces, optional

1/2 craisins, optional
-
sprinkleconfectioner's sugar
- CREAM CHEESE TOPPING

3 ozcream cheese, room temperature

3 Tbspmargarine or butter
-
1/2 tspvanilla

1 1/2 cconfectioner's sugar
How To Make chipped apple cake with cream cheese topping

1Stir the apple slices and sugar together in a large bowl & let stand for one hour.

2Add oil, baking soda, baking powder, flour, vanilla, eggs, walnuts, & raisins to the apples & sugar and mix together well. You may need to add a little milk (start with 1 Tablespoon) to make the batter stirrable, depending on the juiciness of the apples.

3Pour the batter into a cooking-sprayed 13 x 9 pan.

4Bake at 350 degrees F. for 40-45 minutes, until a toothpick comes out clean from the center.

5Sprinkle with a little confectioner's sugar, if desired. Serve warm or cooled. Top with Cream Cheese Topping or whipped cream.

6CREAM CHEESE TOPPING: Beat all ingredients together using a mixer until well-blended. Chill until ready to use.
