My grandmother made this when I was very young. We wood pick the cherries and freeze some for the winter.My mother just gave me the recipe.I can't wait to try it. It's been so long,It is very tart. 5/13/13.

2 1/2 ccanned tart cherries,drained

1/2 cliquid from cherries

1/2 csugar

2 Tbspquick cooking tapioca

2egg whites

1 dashsalt

1/4 tspcream of tartar

2egg yolks

1/3 csugar

6 Tbspcake flour
How To Make cherry puff

1Crush cherries with potato masher.Add cherry liquid,sugar,and tapioca.Simmer for 5 minutes,stirring constantly.

2Beat egg whites until foamy;add salt and cream of tartar;beat stiff.

3Beat egg yolks until thick and lemon colored; add sugar; beat thoroughly. Fold egg yolks into egg whites, then fold in flour.

4Pour cherry mixture into 1 1/2-quart casserole.Pour batter on top. Bake in slow oven ( 325 ) for 40 minutes.Serve warm.
