Years ago my Mother purchased a cookbook called A Woman's Paradise of Recipes. It is a compilation of recipes from the kitchens of the Associated Women For Pepperdine College and it was published in 1962. My cookbook is very worn and tired looking but the recipes in it are still tried and true. I have chosen one of my favorite to share with you all. I slightly tweaked the recipe by adding 2 ounces more Cream Cheese and an additional 1/2 tsp. Vanilla. This is an elegant dessert for any occasion.

Ingredients For cherry delight cheesecake

2 cgraham cracker crumbs

2 Tbspsugar

1 stickplus 3 tablespoons butter

8 ozcream cheese
-
1 cpowdered sugar
-
1 tspvanilla extract
-
1 cchopped walnuts
-
1 lg16 oz. container whipped topping
-
1 cancomstock cherry pie filling
How To Make cherry delight cheesecake

1Mix first 3 ingredients together and press in a 9 inch pie plate.

2Bake for 10 minutes at 350 degrees. Cool on wire rack.

3Blend together powdered sugar, cream cheese and vanilla. Spread on cooled crust.

4Sprinkle chopped Walnuts over Cream Cheese mixture.

5Spread the Whipped Topping over the Chopped Walnuts saving enough to decorate edges and center.

6Spread the Cherry Filling over the Whipped Topping.

7Decorate edges with remaining Whipped Topping with a dollop in center if so desired. Sprinkle dollop with chopped Walnuts.

8Cut and enjoy!
