Christmas seems to be the time for baking beautiful deserts. Here is another recipe for your holiday to share, with family and friends. A few years back I made one for the club and it was auctioned off for charity... Was I surprised when it sold for $35.00 !!!! Nancy 11/29/12

Ingredients For carrot pecan cake for the holidays

  • 1-1/2 c
    sifted cake flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1 c
    finely chopped carrots
  • 1/2 c
    orange marmalade
  • 1/2 c
    chopped pecans
  • 1 c
    sugar
  • 2
    eggs
  • 2/3 c
    melted crisco

How To Make carrot pecan cake for the holidays

    Pre-heat oven to 350F. Sift together flour,baking soda,baking powder,salt and spices. Add the remaining ingredients,blend well. Spread batter in a greased, fluted 2 quart baking mold, or a bundt pan. Bake 40-50 minutes. Cool 10 minutes in pan. Invert on to a wire rack to cool completely. Glaze and decorate as desired.

    Conf. glaze: 1Tabl. milkor light cream 1 cup sifted conf. sugar 1/2 teaspoon vanilla Combine all ingredients, blend well. Top with cherries. Foto and recipe was clipped from a magazine many years ago. Maybe the 70's ?
