I got this off a mayonnaise jar about 25 years ago. It is very good and not as greasy as one made with oil.

Ingredients For carrot cake

  • 2 c
    unsifted flour
  • 2 tsp
    baking soda
  • 2 tsp
    ground cinnamon
  • 1/2 tsp
    ground ginger1/2
  • 1/2 tsp
    salt
  • 3 lg
    eggs
  • 1 1/2 c
    sugar
  • 3/4 c
    real mayonnaise
  • 1- 8oz can
    crushed pineapple with juice
  • 2 c
    coarsely grated carrots
  • 1 c
    coarsely chopped walnuts
  • 3/4 c
    raisens or dried cranberries

How To Make carrot cake

    Grease and flour 2- 9" round baking pans. Preheat oven to 350*

    in bowl sift together first 5 ingredients. Set aside.

    In mixer bowl, beat together next 4 ingredients. Gradually beat in flour mixture.

    With a spoon mix in carrots, nuts and dried fruit.

    Turn into prepared pans bake for 30-35 mins or until a skewer comes out clean. Let cool 10 mins and turn out on racks to cool completely.

    beat together 16 oz whipped topping and 1 8oz block of cream cheese softened. frost cake
