I got this off a mayonnaise jar about 25 years ago. It is very good and not as greasy as one made with oil.

Ingredients For carrot cake

2 cunsifted flour

2 tspbaking soda

2 tspground cinnamon

1/2 tspground ginger1/2

1/2 tspsalt

3 lgeggs
-
1 1/2 csugar
-
3/4 creal mayonnaise
-
1- 8oz cancrushed pineapple with juice

2 ccoarsely grated carrots
-
1 ccoarsely chopped walnuts

3/4 craisens or dried cranberries
How To Make carrot cake

1Grease and flour 2- 9" round baking pans. Preheat oven to 350*

2in bowl sift together first 5 ingredients. Set aside.

3In mixer bowl, beat together next 4 ingredients. Gradually beat in flour mixture.

4With a spoon mix in carrots, nuts and dried fruit.

5Turn into prepared pans bake for 30-35 mins or until a skewer comes out clean. Let cool 10 mins and turn out on racks to cool completely.

6beat together 16 oz whipped topping and 1 8oz block of cream cheese softened. frost cake
