1{8 ounces) cream cheese, softened

1/2 csugar

1large egg

1 tsplemon juice

1/2 tspvanilla

3 Tbspflour
- GLAZE

1(4 ounces) cream cheese, softened

2 Tbspbutter, softened
-
2 Tbsporange juice
-
2 tsplemon juice

1 tsporange extract

1/2 tspvanilla

2 csifted powdered sugar
How To Make carrot cake with cream cheese filling and glaze

1Cream cheese filling: Beat the cream cheese and sugar until light. Beat in remaining filling ingredients until smooth. Set aside.

2In a large bowl, mix all of the dry ingredients together. In a separate bowl, gently whisk eggs, then stir in remaining wet ingredients just to combine. Do not overmix.

3Stir wet ingredients into dry ingredients just until moistened, then stir grated carrots until evenly combined.

4Spoon 3 cups batter into a greased and floured bundt pan. Spoon cream cheese filling over batter and smooth, but do not touch sides of pan. Top with remaining batter.

5Bake at 350 degrees for 45 minutes, cover with foil, then reduce heat to 325 degrees and bake for 25 to 30 minutes more. Cool in the pan for 10 minutes, then transfer to wire rack to cool completely.

6Using an electric mixer, cream together all of the glaze ingredients, except powdered sugar, on medium speed for 1 to 2 minutes or until completely smooth.

7Add sifted powdered sugar and beat until smooth. Place the glaze in the refrigerator for 5 to 10 minutes before using.

8When cake has cooled, drizzle glaze over cake.
