  • CAKE ROLL
  • 3/4 c
    flour
  • 2 tsp
    cinnamon
  • 1 tsp
    baking powder
  • 1/2 tsp
    each ground ginger and salt
  • 1/4 tsp
    ground nutmeg, cloves, and cardamon
  • 3 lg
    eggs
  • 1/2 c
    sugar
  • 2 Tbsp
    vegetable oil
  • 1 tsp
    vanilla extract
  • 2 c
    finally shredded carrots
  • CREAM CHEESE FILLING
  • 1 c
    powdered sugar plus more for rolling
  • 8 oz
    cream cheese softened
  • 1 stick
    butter softened
  • 1 tsp
    vanilla extract

How To Make carrot cake roll up

    For the cake Preheat oven 375 degrees. Line a jelly roll pan with parchment paper.

    Whisk together the flour, baking powder, ginger, salt, nutmeg, cloves, and cardamon. In a separate bowl mix the eggs, and sugar 1 minute. Add the oil, vanilla and carrots. Fold in the flour mixture. Spread the batter over the parchment paper then bake for 10 to 15 minutes. Carefully lift the cake from the pan by the parchment paper and roll from short end and let cool until it reaches room temperature.

    Meanwhile mix the cream cheese, powdered sugar, butter and vanilla together. Add a little milk if needed to make it a creamy consistency but not too runny.

    Spread the filling inside the cake and roll up again. Roll in a little powdered sugar. Refrigerate for 1 hour. Cut into rounds.
