1 cpowdered sugar plus more for rolling

8 ozcream cheese softened

How To Make carrot cake roll up

1For the cake Preheat oven 375 degrees. Line a jelly roll pan with parchment paper.

2Whisk together the flour, baking powder, ginger, salt, nutmeg, cloves, and cardamon. In a separate bowl mix the eggs, and sugar 1 minute. Add the oil, vanilla and carrots. Fold in the flour mixture. Spread the batter over the parchment paper then bake for 10 to 15 minutes. Carefully lift the cake from the pan by the parchment paper and roll from short end and let cool until it reaches room temperature.

3Meanwhile mix the cream cheese, powdered sugar, butter and vanilla together. Add a little milk if needed to make it a creamy consistency but not too runny.

4Spread the filling inside the cake and roll up again. Roll in a little powdered sugar. Refrigerate for 1 hour. Cut into rounds.
