This is Ma's carrot cake recipe, from her recipe box we found in NC in July 2019.

Ingredients For carrot cake, ma

  • 1 c
    sugar
  • 1 c
    mazola oil
  • 3
    eggs
  • 1 tsp
    salt
  • 1 1/2 c
    flour
  • 1 1/3 tsp
    soda
  • 1 1/3 tsp
    powder
  • 1 1/3 tsp
    cinnamon
  • 2 c
    grated carrots
  • 1/2 c
    chopped nuts
  • 3/4 c
    raisins
  • ICING:
  • 4 oz
    cream cheese
  • 1/4 c
    butter
  • 2 tsp
    vanilla
  • powdered sugar (about 1/2 box)

How To Make carrot cake, ma

  • 1
    Combine sugar and oil with mixer. Add eggs, one at a time beating well. Sift dry ingredients and add to mixture, beating well. Fold in carrots, raisins and nuts. Put in greased layer cake pans Bake in 300 degree oven for one hour.

    ICING: Combine cream cheese with melted butter and add sugar to good spreading consistency. Add vanilla and frost cake.
