This is not only a family favorite, but friends at work ask me to make it for every potluck. I think that's all they think I can make but it is scrumptious.

Ingredients For carrot cake hawaiian delight

1 cvegetable oil

3eggs

1 tspsoda

2 tspcinnamon

1 3/4 ccrushed pineapple and a little juice

2 csifted flour

1/2 tspsalt

2 tspvanilla

2 cgrated carrots, not organic or baby carrots
How To Make carrot cake hawaiian delight

1Mix together eggs, sugar and oil. Add flour, soda, salt, cinnamon and vanilla. Blend in pineapple and carrots. Bake in 13 x 9 pan @ 350 for 40-45 minutes. Frosting: Blend together 8 oz. cream cheese, 4 c. powdered sugar, 1/2 c. margarine and 2 tsp. vanilla Blend all together and frost cake after cool. Be sure to use regular cream cheese and margarine because if you use the lite versions, frosting will not set up.
