Here is my very favorite cake recipe. This is just a little bit different from your average carrot cake because it has pineapple in it.

Ingredients For carrot cake

4eggs

2 csugar
-
1 1/2 ccooking oil

2 cflour
-
1 1/2 tspsoda

1 tspsalt
-
1 tspcinnamon

3 cgrated carrots

1 cdrained crushed pineapple

1 1/2 cchopped pecans
How To Make carrot cake

1cream eggs, 2 c. sugar and 1 1/2 cooking oil.

2mix:flour, soda, salt and cinnamon. add to cream to mixture, then add to carrots, pineapple, and pecans.

3pour into a greased bundt pan and bake at 350 for 50-60 mins. cream 8 oz. cream cheese, 1/2 stick of butter and 2 cups powder sugar, then add 2 tsp. vanilla. mix well with electric mixer. spread on cooled cake.
