This recipe is made with "Junior" baby food! It is so moist and so good! Have had this recipe for 30+ years.

Ingredients For carrot bars

  • 2
    eggs beaten
  • 2 c
    sugar
  • 1 1/3 c
    vegetable oil
  • 2 c
    flour
  • 2 tsp
    baking soda
  • 1 c
    junior baby food carrots
  • 1 tsp
    salt
  • 1 tsp
    ground cinnamon
  • 1 c
    chopped pecans - optional
  • FROSTING:
  • 1 - 8 oz
    pkg. cream cheese - softened
  • 4 Tbsp
    butter
  • 1 lb
    powdered sugar
  • 1 tsp
    vanilla

How To Make carrot bars

  • 1
    Mix together the EGGS, SUGAR AND OIL and then add the rest of the ingredients. Mix well with electric mixer. Pour into a large greased/sprayed cookie sheet pan with 1" sides

    Bake in a preheated oven set at 350 degrees F. for 25-35 minutes.Cool completely then Frost
