This was an orphaned recipe that I adopted. I just had to try it and, yes, it is good. Many thanks to the person who posted this for me to find!

Ingredients For cappuccino muffins

  • 3/4 c
    cake flour
  • 1 1/4 c
    all purpose flour
  • 1/2 c
    cocoa powder
  • 1/4 c
    brown sugar
  • 1/4 c
    sugar
  • 1 Tbsp
    baking powder
  • 1 Tbsp
    instant coffee, decaffinated
  • 1/2 tsp
    salt
  • 6 Tbsp
    butter, softened
  • 1 c
    sour cream
  • 1 c
    half and half
  • 2
    eggs
  • 6 oz
    chocolate, bittersweet and finely chopped

How To Make cappuccino muffins

    Preheat oven to 350 degrees. Fill 12 large muffin cups with paper liners. Set pan aside. Stir together flours, cocoa powder, sugars, baking powder and instant coffee powder. In another bowl, beat butter, half and half, sour cream and eggs until smooth.

    Fold dry ingredients and chocolate into egg cream mixture; mix lightly until just moistened. Fill prepared muffin cups 2/3 full; bake at 350 degrees until tops are firm, about 15 minutes.
