The Family and Friends have tried this cake and All love It. Good for any occasion. We tried this with a Yellow Cake Mix and it was also good if Chocolate is to much for you. The left over filling can be placed in the refrigerator and added to Canolli Shells to make another desert

Ingredients For canolli cake

  • CAKE
  • 2 box
    dark chocolate cake mixes
  • 6
    eggs
  • 1 c
    vegetable oil
  • 2 2/3 c
    water
  • FILLING
  • 3 c
    drained and dry ricotta cheese
  • 1 c
    powdered sugar
  • 8 oz
    dark chocolate chips
  • 2 tsp
    vanilla extract
  • FROSTING
  • 1/4 c
    soft butter
  • 1 1/2 c
    sifted xxxx sugar packed
  • 1/4 c
    dark chocolate cocoa
  • 3 Tbsp
    cream or milk
  • 1/2 tsp
    vanilla

How To Make canolli cake

    Follow the directions on the cake mixes and cook as directed in 8 inch round cake pans. Once cooked sit aside and cool completely. Once cooled you can either keep the cakes whole or take dental floss and cut the cakes in half to make four slices total. Either way is good

    Pour Ricotta Cheese in a bowl and let set to separate the water. Once separated pour water off and place on paper towel to soak up the rest of the water. Add in powered sugar, chocolate chips and vanilla extract and mix together and set aside until ready to assemble cake

    FROSTING: Let butter stand until room temperature. Mix butter, sifted sugar, cocoa,cream and vanilla with a mixer until creamy. Set aside until ready to frost cake. Best if at room temperature

    Assemble cake as follows: lay first layer of cake on a plate and cover about a 1/4" with canolli filling. Follow the rest of the layers as the first. Put last cake layer on top. Make frosting and coat entire cake including sides.

    OPTIONAL: Slice strawberries and arrange on top. Let set in refrigerator about one hour before serving.
