campfire s'mores poke cake

My grand kids and I were looking through my cabinets for some ideas on what to bake together when the oldest 1 asked, " Why don't we make a S'mores cake?" We had a lot of the ingredients, all we needed was the chocolate syrup which their mommy had, so off we went and the cake came out so good it didn't last the night, lol.

Ingredients For campfire s'mores poke cake

2 cgraham cracker crumbs

1/4 cflour

1-1/2 tspbaking powder

3 lgeggs, separated

1/2 cbutter

1 csugar

1/2 tspvanilla

3/4 cmilk

1/2 cchocolate syrup, plus more for drizzling

1 cmini chocolate chips

1 cbutter

3/4 cpowdered sugar

7 ozmarshmallow fluff
How To Make campfire s'mores poke cake

1Heat oven to 350. Line a 11" x 7" pan w/ parchment paper. In medium bowl, combine 1-1/2 cups graham cracker crumbs, flour and baking powder.

2In lg bowl beat 1/2 cup butter and 1 cup sugar until fluffy. Beat in 1/2 tsp vanilla and then egg yolks. Add milk alternately w/ the flour mix. Beat egg whites in a medium bowl until peaks form.

3Fold in egg whites. Pour batter into pan. Bake 20 mins or until a toothpick inserted in center comes out clean. Let cake cool. In bowl, beat remaining butter and vanilla. Beat in powdered sugar and then the marshmallow fluff. Poke holes into the cooled cake and pour the chocolate syrup over the holes, smoothing the syrup out as you go. Frost the cake w/ the marshmallow mix. Sprinkle the top of cake w/ remaining cracker crumbs. Drizzle w/ chocolate syrup. Dig in!!
