I created this new cake recipe - it's butterbeer! I was researching a butterbeer recipe on You Tube, and was inspired to make this delicious cake.

Ingredients For butterbeer layer cake

  • CAKE
  • 1/2 c
    sweet cream butter
  • 3/4 c
    heavy whipping cream
  • 1 c
    packed brown sugar
  • 1 c
    English toffee baking bits
  • 1 box
    yellow cake mix (18.25 ounce)
  • 3/4 c
    chilled cream soda
  • 1 1/4 c
    water
  • 1/3 c
    vegetable oil
  • 3
    large eggs
  • 1/2 c
    butterscotch ice cream topping
  • 1 1/4 c
    butterscotch chips
  • BUTTERBEER FROSTING
  • 1 tube
    frozen whipped topping, thawed
  • 1 pkg
    instant butterscotch pudding mix
  • 8 oz
    cream cheese, softened
  • 3/4 c
    chilled cream soda
  • 1 c
    butterscotch ice cream topping

How To Make butterbeer layer cake

    Preheat oven to 325 degrees F.

    In a saucepan, combine the sweet cream butter, whipping cream and brown sugar. Cook over low heat until the butter is just melted, stirring occasionally.

    Pour into 2 9-inch round cake pans. Sprinkle evenly with English toffee baking bits.

    In a large bowl, combine cake mix, cream soda, water, oil and eggs at low speed until moistened. Add the butterscotch ice cream topping. Beat 2 minutes at the highest speed.

    Carefully spoon the batter over the English toffee mixture. Sprinkle with butterscotch chips.

    Bake for 35 to 45 minutes, or until the cake springs back when lightly touched in the center. Cool 5 minutes. Remove from the pans and cool completely.

    To make the butterbeer frosting, combine whipped topping, butterscotch pudding mix, cream cheese and cream soda in a large bowl and whisk together until blended.

    To assemble the cake, place one layer on a serving plate, spread with butterscotch ice cream topping. Top with second layer and frost the top and sides with butterbeer frosting. Store in refrigerator.
