This recipe was given to my mother by a fellow Army Wife in the 60's. It's been a family favorite as long as I can remember.

Ingredients For bubble cake

2 1/4 call purpose flour

1 tspbaking soda

1/4baking powder
-
1/2 tspsalt

2 csugar
-
4eggs
-
1 tspvanilla extract

1 canfruit cocktail in syrup or juice

1/2 cchopped walnuts
- SAUCE
-
1 sm canevaporated milk

1 csugar

1 stickbutter
-
1 tspvanilla extract
How To Make bubble cake

1Combine all dry ingredients in large mixing bowl. Beat together eggs and vanilla add to dry ingredients, along with fruit cocktail (with juice) and walnuts. Mix by hand until combined.

2Spray 9 x 13 " pan with non stick cooking spray, pour in all of the batter and bake at 350 degrees until pick inserted into center comes out clean. Approx 30 min.

3Sauce: While cake is baking combine sugar, evaporated milk and butter in small sauce pan. Cook over medium heat, stirring constantly until it reaches a continuous rolling boil for one minute. Remove from heat.

4Remove cake from oven and use a knife to make slits into the cake at random intervals. (This will allow the sauce to soak into the interior of the cake better) Pour sauce over cake and try to keep everyone away until it cools enough to eat. Ask.com has some good treatments for burned tongues.
