Ingredients For brownie-mousse mini cups

    19.9 oz pkg brownie mix
  • 1 lg
    egg
  • 1 c
    shredded zucchini
  • 1/2 c
    applesauce, unsweetened
  • 1
    1.4 oz pkg sugar-free, fat-free instant chocolate pudding mix
  • 1-1/2 c
    fat-free milk
  • 1/2 c
    fat-free cool whip, thawed

How To Make brownie-mousse mini cups

    Heat oven to 350. Lightly spray 16 small muffin cups in cupcake pans w/ cooking spray.

    In bowl, combine first 4 ingredients and 1 tbsp water. Mix well. Divide evenly among the cups. Bake 15 min, or until a toothpick inserted in center comes out clean.

    Let mini cups cool. In bowl, whisk together pudding mix and milk. Spread evely over each mini cup. Top w/ cool whip.
